🥘 Authentic Rajasthani Besan Gatte Ki Sabzi Recipe | A Traditional Delight

If there is one dish that truly represents the flavors of Rajasthan, it is Besan Gatte Ki Sabzi. Although preparing it takes some time, every bite is worth the effort. Soft gram flour dumplings (gatte) cooked in a rich and flavorful gravy make this dish a favorite in many Rajasthani households. It tastes best with hot chapati, bajra roti, or steamed rice.


🌾 Ingredients

For the Gatte (Gram Flour Dumplings)

  • 1 cup besan (gram flour)
  • Salt to taste
  • 1 teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • ½ teaspoon cumin seeds (zeera)
  • ½ teaspoon ajwain (carom seeds)
  • 1 tablespoon ghee
  • Water as required

For the Gravy

  • 1 tablespoon mustard oil
  • ½ teaspoon cumin seeds
  • 1 dried red chilli
  • 1 finely chopped onion
  • Puree of 2 tomatoes
  • 5–6 cashew nuts (kaju), blended with tomatoes
  • Salt to taste
  • 1 teaspoon red chilli powder
  • ½ teaspoon turmeric powder
  • 1 tablespoon fresh malai (cream)
  • Water as required

👩‍🍳 Step 1: Prepare the Gatte

  1. In a bowl, combine besan, salt, red chilli powder, coriander powder, cumin seeds, ajwain, and ghee.
  2. Add a little water gradually and knead into a stiff dough.
  3. Divide the dough and roll it into long cylindrical shapes.
  4. Bring water to a boil and cook the rolls on medium flame for 8–10 minutes.
  5. Remove them from the water and let them cool slightly.
  6. Cut them into small bite-sized pieces and keep aside.

🍅 Step 2: Prepare the Gravy

  1. Heat mustard oil in a pan.
  2. Add cumin seeds and one dried red chilli.
  3. Add finely chopped onion and sauté until golden brown.
  4. Add the tomato and cashew puree.
  5. Mix in salt, red chilli powder, and turmeric powder.
  6. Cook until the masala releases oil.
  7. Add one spoon of fresh malai and mix well.

🍛 Step 3: Combine Everything

  1. Add the prepared gatte pieces to the gravy.
  2. Add a little water if required and simmer for a few minutes until the gravy thickens.
  3. Allow the flavors to blend well.

🍽️ Serving Suggestions

Serve hot Besan Gatte Ki Sabzi with:

  • Fresh chapati
  • Bajra roti
  • Jeera rice
  • Steamed rice

This authentic Rajasthani dish is perfect for family lunches and festive meals. Though it takes a little patience to prepare, its rich taste and aroma make it one of Rajasthan's most loved traditional recipes.
