For Tempering

  • 1 tablespoon mustard oil
  • ½ teaspoon cumin seeds (jeera)
  • ¼ teaspoon fenugreek seeds (methi dana)
  • 1 medium onion, finely chopped
  • 1 green chilli, finely chopped
  • 1 teaspoon garlic paste
  • Fresh coriander leaves for garnishing

👩‍🍳 How to Make Authentic Rajasthani Kadhi

Step 1: Prepare the Kadhi Mixture

Take a bowl and add:

  • 3 tablespoons besan
  • Salt
  • Red chilli powder
  • Turmeric powder
  • Coriander powder
  • 1½ glasses of lassi

Whisk everything well until you get a smooth mixture with no lumps.


Step 2: Prepare the Tempering

Heat 1 tablespoon mustard oil in a pan.

Add:

  • Cumin seeds (jeera)
  • Fenugreek seeds (methi dana)

Once they start crackling, add finely chopped onion and green chilli. Sauté until the onion turns golden brown.


Step 3: Cook the Kadhi

Pour the prepared besan-lassi mixture into the pan.

Add garlic paste and stir continuously to prevent curdling. Once the kadhi starts boiling, reduce the flame and let it simmer for about 5 minutes.


Step 4: Garnish and Serve

Turn off the flame and garnish with freshly chopped coriander leaves.

Serve hot with:
