🍋 Kaccha Aam Ki Sabzi (Kairi ki Curry) – Traditional Rajasthani Sweet & Sour Mango Curry

Summer in Rajasthan brings with it the delightful taste of Kaccha Aam Ki Sabzi, also known as Kairi ki Curry. Made with raw mangoes, aromatic spices, and jaggery or sugar, this dish perfectly balances sweet and tangy flavors. It is a seasonal favorite that pairs wonderfully with hot wheat rotis and a spoonful of desi ghee.


🥭 Ingredients

For the Curry

  • 5–6 raw mangoes (kaccha aam/kairi)
  • 1½ glasses water
  • 5–6 tablespoons sugar or jaggery (gur) for authentic taste

For the Masala

  • 2 onions, finely chopped
  • 2 green chilies, finely chopped
  • 4–5 garlic cloves, crushed into a paste
  • 1 tablespoon mustard oil
  • 1 teaspoon cumin seeds (jeera)
  • ½ teaspoon fenugreek seeds (methi dana)
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric powder (haldi)
  • 1 teaspoon coriander powder (dhaniya powder)
  • Salt to taste

👩‍🍳 How to Make Kaccha Aam Ki Sabzi

Step 1: Prepare the Raw Mangoes

Wash 5–6 raw mangoes thoroughly. Cut each mango into 6 large pieces and keep them aside.

Step 2: Prepare the Tempering

Heat 1 tablespoon mustard oil in a pan. Add cumin seeds and fenugreek seeds. Once they begin to crackle and change color, add finely chopped onions and green chilies. Sauté until the onions turn golden brown.

Step 3: Make the Masala

Crush 4–5 garlic cloves into a paste. Add red chili powder, turmeric powder, coriander powder, and salt. Mix with a little water to form a smooth paste.

Add this spice mixture to the onions and cook until the masala releases oil and becomes aromatic.

Step 4: Add Water

Pour in 1½ glasses of water and bring the mixture to a boil.

Step 5: Cook the Mangoes

Add the raw mango pieces and cook on medium heat until they become soft and the gravy thickens.

Step 6: Add Sweetness

For a traditional Rajasthani flavor, add 5–6 tablespoons of jaggery (gur). You can also use sugar. Cook for another 2–3 minutes until the jaggery dissolves completely.

Turn off the flame.
